"Pulled Pork" Jackfruit Amazingness


This tastes amazing! I have brought it to events and parties as an appy, on a baguette and everyone thought/assumed it was pulled pork. No one even asked! For this recipe I used:

- 1 can of jackfruit

- 1/2 sweet onion

- 2 garlic ( i used minced )

- 2 tbsp olive oil

@mealprepforyou in house BBQ sauce, stevia sweetened.

OR this is a good alternative = Crazy Mooskies No Added Sugar Original BBQ Sauce, found on amazon

BBQ SAUCE RECIPE BELOW

  • -2 1/2 6-oz cans tomato paste

  • 1/2 cup Apple cider vinegar

  • 1/2 cup natural sweetener (stevia or your choice)

  • 2 tbsp Worcestershire sauce *

  • 1 tbsp Liquid hickory smoke

  • 2 tsp Smoked paprika

  • 1 tsp Garlic powder

  • 1/2 tsp Onion powder

  • 1/2 tsp Sea salt

  • 1/4 tsp Chili powder

  • 1/4 tsp Cayenne pepper (or more if you like it hot)

  • 1 1/2 cup Water (approximate amount - see instructions)

INSTRUCTIONS

Whisk all ingredients together in a saucepan, adding the water last. Start with a cup of water, then whisk in a bit more at a time, until it reaches a consistency *slightly thinner* than barbecue sauce. I ended up using about 1 1/2 cups of water, but it will vary depending on how thick your tomato paste is.

  • Bring to a gentle boil at medium-high heat, then reduce to medium-low. Simmer, uncovered, stirring frequently, for 20 minutes, or until slightly thickened.

  • Taste and adjust sweetener or cayenne pepper if you prefer the sauce to be sweeter or spicier. If it's still thicker than you like, you can stir in additional water, a tablespoon at a time, until reaching desired consistency.

INSTRUCTIONS FOR JACKFRUIT

-Begin by draining the jackfruit and rinsing well under cold water. Using your fingers, massage the jackfruit and break the pieces apart; set aside

-In a large sauté pan, heat the olive oil, add the onion and jackfruit; sauté until the onion is slightly caramelized

-Add the remaining ingredients and continue to sauté over medium heat for 10-15 minutes.

-Once cooked, use a fork to press the remaining larger pieces of jackfruit so that the pieces fall apart and resembled the fibers of cooked pork.

-At this point, you have two options - first, you can purchase jarred pulled pork sauce at your local grocery store, or second, you can make your own sauce by following the recipe above. If you decide to use store-bought sauce, be sure to read the label, not all sauce is vegetarian/vegan

-Poor the sauce over the jackfruit, lower the heat to medium-low, and cook for 15 minutes.
