An easy and healthy pancake recipe, with simple ingredients. Im all about convenience and these are so quick and SO EASY!
The secret ingredient to the fluffiest protein pancakes ever is cooked sweet potato, it makes the consistency absolutely unreal! Once you use sweet potato you will never go back to not using it in your pancakes. MARK. MY. WORD.
Alright, here it goes: 🥞1/2 cup cooked sweet potatoes/yamsn or 1/2 a banana 🥞2 scoops @drinkorgain protein powder or any protein powder - I used vanilla 🥞3/4 cup egg whites OR VEGAN flax egg ( 1tbsp flaxseed meal plus 2.5 tbsp water ) let sit for 5 minutes. For vegan option I also add 1 tbsp maple syrup and 1 tsp xanthan gum. 🥞1 tsp baking powder. 🥞3/4 cup oats. 🥞BLEND all ingredients, and stir in 1/2 cup of blueberries. 🥞Spray coconut oil in a pan and cook it up! 🥞Blueberry compote on top, is frozen blueberries melted down in a pot. . 🥞With some @swervesweetie.
