Rainbow Peanut Bowl


THERES SOMETHING ABOUT A PEANUT SAUCE, THAT IS FITTING FOR ALMOST ALLL YEAR MEALS, AM I RIGHT? I PREFER TO DRINK BUT THATS JUST ME.... ANYWAYS!

ING ( FOR THE WHOLE DANG BOWL )

CRISPY TOFU:

1. BLOCK EXTRA FIRM TOFU, OR YOU CAN USE ANIMAL PROTEIN OF YOUR CHOICE.

2. 1/2 CUP VEGETABLE BROTH

3. 1 TBSP LIGHT SOYA SAUCE

4. 2 FLAX EGG OR EGG - 2 flax eggs or eggs (1 flax egg= 1 tablespoon flax + 3 tablespoons water), let flax eggs sit 5 minutes before using.

5. 1/2 CUP GF FLOUR

6. 1 CUP GF BREAD CRUMBS

7. 1/2 TEASPOON ONION POWDER

8. 1/2 TEASPOON GARLIC POWDER

9. 1/2 TEASPOON SALT

10. 1/4 TEASPOON PEPPER

VEGGIES AND SUCH:

1. CHICK PEAS AND YAMS I MADE IN A AIRFRYER, YOU GUYS IF YOU DONT HAVE AN AIRFRYER YOU NEED ONE. YESTERDAY.

2. VERMICELLI NOODLES

3. BABY TOMATOES OR REGULAR SIZED

4. CILANTRO

5. LIME

6. PEANUTS

BUT HONESTLY, YOU GUYS.. USE WHATEVER YOU LIKE!

PEANUT SAUCEEEE:

1. 1/2 CUP PLAIN POWDERED PEANUT POWDER ( CAN BE FOUND AT MOST HEALTH FOOD STORES).

2. 2 TBSP LIQUID BRAGGS, OR SOYA SAUCE

3. 1-3 TBSP WATER ADD UNTIL RUNNING CONSISTENCY

3. CAN ADD GARLIC POWDER AND SRIRACHA - TOTALLY OPTIONAL THOUGH I TYPICALLY USE THE 3 ABOVE INGREDIENTS BUT IF IM FEELING EXTRA SPICY ILL ADD SOME EXTRA ING!

CREATE!

CRISPY TOFU:
1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

2. Slice the tofu into 10 squares: Cut the tofu into 5 slices along the long edge, then cut each column in half to make squares (see note for variations). Lightly press each slice of tofu with a paper towel to remove some of the liquid.

3. To make the marinade, stir together the vegetable broth and soy sauce in a shallow pan. Marinate the tofu in the vegetable broth mixture for at least 10 minutes.

4. Prepare 3 bowls: one with the flour, one with panko bread crumbs and spices, and one with the flax eggs. Coat the tofu in the flour, then the flax eggs, then the panko.

5. Bake at 400 degrees F on the parchment lined baking sheet for 15 minutes. Carefully flip the tofu bites over, then bake for another 15 minutes. They're ready when golden brown and crispy.
